Central Florida -- Bill Peterson has resigned as athletic director at the university. Peterson, 64, is a former football coach at Florida State, Rice and with the Houston Oilers of the National Football League. Georgetown -- Baseball Coach Ken Kelly, who this past season announced he would resign but did not give a reason, made it official yesterday. In seven years at GU, Kelly was 139-137-2. JURISPRUDENCE

Kenneth Patera and Masanori Saito -- Were each given a two-year prison sentence to be followed by six years of probation in connection with an assault last year on several police officers at a Waukesha (Wis.) hotel. Patera is a former U.S. Olympic weightlifter. Mario Soto -- A battery charge against the Cincinnati Reds pitcher in the wake of a scuffle at an Atlanta nightclub in April was dropped. The scuffle was ruled "obviously a mutual confrontation." FOOTBALL Dallas Cowboys -- Signed tight end Joe Jones of Virginia Tech, their 10th-round draft pick, to a series of one-year contracts. Buffalo Bills -- Announced the signing of free agent safety Ray Griffin and free agent linebacker Brian Pillman. BASEBALL

Chicago White Sox -- Recalled left-handed reliever Juan Agosto from AAA Buffalo and sent down infielder Bryan Little. Milwaukee Brewers -- Activated catcher Bill Schroeder, who has had elbow problems, and optioned left-handed pitcher Ray Searage to Vancouver. St. Louis Cardinals -- Announced signing of LHP Joe Magrane, their top draft choice, who was 18th pick overall. He was 13-8 this spring for the University of Arizona.
