How Bill and India Cox harvest baby ginger

As part of this week’s cover story on baby ginger production in the Mid-Atlantic, I had the pleasure of spending time with Bill and India Cox, a pair of former office professionals who met on and fell in love — with each other and with farming as a second career.

In this video — and the two after the jump — the couple explains how they harvest fresh young ginger from the durable grow bags in their hoop house at Casselmonte Farm.
