We ended up with an incredible roundup of what the staff would agree were some of the most delicious treats this town had to offer: The palak chaat at Rasika, the falafel at Amsterdam Falafel, the pupusas at hole-in-the-wall Blanca’s. [See the gallery of all 40 essential Washington eats here.]

We couldn’t help but wonder: What would our readers come up with if we asked you to dig up healthier fare? This time around, we’re looking for Washington’s best veggie dishes. Yes, as in sans meat.

We’re convinced that area restaurants are turning out increasingly sophisticated offerings for vegetarians and vegans — dishes like the vegetarian banh mi at Song Que Deli in Falls Church’s Eden Center, and the vegan fried chik’n sandwich at Everlasting Life Cafe in Petworth, and on the more highbrow end, the irresistible, mint-laced roasted cauliflower at Graffiato and the vegan gyro at Blackbyrd Warehouse.
