Following a few practice drills with the owners’ friends and family, District Kitchen (202-238-9408) will open to the general public Wednesday for dinner. The 75-seat  restaurant in Woodley Park marks the return of chef Drew Trautmann, who previously cooked at the late Mendocino Grille in Georgetown.

 District Kitchen was scheduled for October delivery . “We love this beautiful old building, but sometimes we hate this beautiful old building,” says Trautmann, who blames the delay on plumbing, gas and other issues with the 100-year-old building at 2606 Connecticut Ave. NW that he and business partner Jawad Saadaoui took over from Jandara, a Thai restaurant.

 Trautmann’s opening menu speaks to winter appetites. Among the attractions are rabbit boudin, cider-glazed pork shank with bread dumplings and sauerkraut and a nod to Cincinnati chili that’s been updated with ginger and chocolate in the seasoning and house-made fusilli instead of spaghetti as the base.

 Helping out in the kitchen is Daniel Velasco, Trautmann’s No. 2 at Mendocino Grille and other restaurants.
