Bar manager Adam Bernbach is taking Proof’s basic eggnog (egg yolk, cream, sugar, nutmeg) and twisting it four ways, adding a base spirit of Madeira, bourbon, cognac or rum. But Bernbach isn’t just adding a shot of booze; that’s not his style. The fortified Madeira, for example, will go into the eggnog along with Four Roses bourbon. “The Madeira has a salted caramel quality, which I’ve always enjoyed,” Bernbach says. “And Four Roses has that salted peanut quality.”
Each eggnog cocktail will cost $10. “These are going to be pretty traditional, other than the spirits,” he says. “I’m not using hazelnut milk or anything.” He pauses. “Actually, that sounds pretty good.”
So why an eggnog menu on Christmas Eve? “Well, it’s Christmas Eve and I’m Jewish,” he says with a laugh. “There’s no other reason.”
In keeping with the theme, old Christmas movies will play silently on the flat-screen televisions over the bar, and Bernbach’s hot Scandinavian-style glogg will be on the menu for $8 a glass.
