Albisu will get a chance to hear feedback again Oct. 22, when he introduces a pop-up restaurant in the bar atop Pearl Dive Oyster Palace in Logan Circle. Taco Bamba at Black Jack , which is expected to operate on Mondays through December, takes advantage of the one night of the week the watering hole, owned by Albisu’s pal Jeff Black, is dark. The event also gives Albisu a chance to preview his new menu.

Expect a mix of the traditional (fillings of beef and pork) and the trendy (grilled octopus and veal sweetbread). The chef’s signature taco will layer kobe skirt steak, crunchy chicharron and the charred ingredients for guacamole between two-ply corn tortillas. It will also fit in chorizo made at Plaza Latina , run by Rosa Susinski, Albisu’s mom. The pop-up’s specialty cocktails will include a tequila-based pineapple “agua fresca.”

Doors to the launch party open at 7 p.m. The $40 price of admission includes food, cocktails, tip and tax. Reservations can be made at http://tacobambablackjack.eventbrite.com . Future Mondays will offer a la carte pricing.
