This completely vegan side dish (we couldn’t believe it was vegan either) is just as creamy and luscious as a cheese-laced version. It’s just one of the many dairy- and meat-free options available at Evolve, a newish Takoma cafe from Dr. Baruch, the same chef behind Everlasting Life.
The macaroni and “cheese” is baked at 350 degrees for a crispy top.
A sprinkling of dried oregano and paprika tops the dish.
Elbow macaroni is pre-cooked and smothered with the vegan cheeselike sauce.
Made from soy milk, nutritional yeast, garlic and safflower oil, this cheeselike sauce binds the macaroni together.
$5; Evolve Vegan Restaurant, 341 Cedar St. NW; 202-882-8999.
