An American classic with a Peruvian portable twist On its frozen cookie surface, the ice cream sandwich is as American as it gets. Chef Carlos Delgado of Boveda, however, drew inspiration from his native Peru for CreamCycle, the roving ice cream sandwich carts that are scheduled to hit D.C. streets this month. Each ice cream sandwich ($5) features an inch-thick slab of homemade ice cream wedged between two soft butter cookies. Inventive offerings are the carts' forte: Habanero adds a lip-searing bite to banana ice cream on a coffee cookie (foreground); citrusy lime ice cream pops on a salted lime cookie.
