Now that the smell of charcoal (and propane) is in the air, what should you put over those coals — and where should you buy it? Here are some of my favorite meats, poultry and seafood for summer grilling, along with my preferred places to buy them. NOTE: Prices are subject to change.


Hanger steak

All Angus, from Maryland and Nebraska.

Chuck eye

Steer raised on grass, finished with grain in Maryland.

This boneless rib steak takes very little time to cook, and it’s hearty and filling.

NY strip steak

Choose one with good marbling, and you’ll end up with a tender piece of meat when it’s off the grill.

Chicken breast

Choose breasts that are a half-inch thick; they grill the most evenly and cook through without drying out.

Duck breast

Pastured and organically raised in Pennsylvania. Done in just a minute or two on each side.

Smoked pork chop

Cold smoked, it needs a tender touch on the grill but has great flavor.

Half-inch thick cut, done in Spanish butchery style from the diaphragm of the pig; grass- and grain-fed from Maryland.

Baby back ribs

Whether you sauce them or use a dry rub, baby back ribs are versatile, and quick and easy to grill.

Loin chops

Start them on the cooler edges of the grill, then move over the flame for a quick sear at the end.

Lamb ribs

Marinate them in a little sherry vinegar, lemon juice and garlic before cooking, and serve with chimichurri.

Bacon hot dogs

Cook them off to the side on the grill, not over direct heat.

Broccoli rabe-provolone sausage

Get your meat, veg and dairy all in one bite! Big flavor makes this a real crowd pleaser.

Blood sausage with a hint of nutmeg.

Rosemary and garlic sausage

They smell so good on the grill, your neighbors might wander over for a taste.

The steakiest of fish, swordfish just needs a little olive oil, salt and pepper before hitting the grill grates.

You don’t even need to skewer these big boys, and they cook in about four minutes, tops.
