Washington State Hot Dogs, above, unite two of our favorite things. Serve this with extra dabs of mustard on the side.

Apples and Sausage in Cider, Asturian Style. With lamb sausage, hard cider and crisp, sweet apples. Serve with plenty of bread.

Smoked Trout, Green Apple and Gouda Sandwich. All that goodness on pumpernickel bread.

Chickpea, Crisp Apple and Coconut Salad. It's a summery recipe, sure, but sometimes you need something light to balance all those fall and winter stews and braises.

Roasted Apple and Fennel Salad. For a slightly more seasonal salad; it's hearty enough to serve as a meal (with plenty of crusty bread, of course).

Dorie Greenspan's Sheet Pan Chicken With Apples and Kale. Spiced with ras el hanout (you could also use garam masala).

Roast Pork Loin With Onions, Apples, Potatoes and Apple Thyme Jus. A good one to save for your Sunday roast — the pork should brine for at least 6 hours, and you can make the jus a day ahead.
