COCOA CRISPED: Pastry chef and chocolatier Rachelle Dalva Ferneau puts global (and locavore) touches in her line of Dear Coco artisan confections of Bethesda, which are vegan, gluten-free, certified kosher pareve and made with Belgian chocolate. Recently added to her line of truffles (pictured at top, 12-piece Around the World collection, $25.50) are her toffee and chocolate bars (nine kinds, 3.5 ounces, $7.50 each), including the surprisingly successful flavor combinations of Old Bay-seasoned toffee with roasted Virginia peanuts and sea salt in the dark Chesapeake Toffee Chocolate Bar and cinnamon-clove toffee with rose water, roasted walnuts and sea salt in the dark Istanbul Toffee Chocolate Bar.
