SLICE AND SERVE: Mechelle’s Baking Co., based in Fredericksburg, opened up shop three years ago, but Mechelle Allen, co-owner with her husband, Ricky, has been making pies for years. (The Allens also employ their oldest son, Marcus, who serves as the business strategist and helps to make the pies.) We like the sweet potato — featuring a not-too-sweet, velvety-smooth filling flavored with a subtle kick of nutmeg and cinnamon — and the sweet-tart blackberry. Other varieties include pecan, apple, peanut butter chocolate and lemon meringue. Each pie uses a crust made from butter and vegetable shortening (except for the peanut butter, which has a chocolate wafer crust).

The pies can be purchased year-round at the Fredericksburg and Westover (Arlington) farmers markets, or from May to November at the Marymount Farmers Market. Mechelle’s is also taking holiday orders — due by 9 p.m. on Dec. 17 — for pickup in Stafford, Fredericksburg and Arlington.
