Last year, we chronicled, in mouthwatering detail, some of Washington's most iconic dishes, from Rasika's palak chaat to Amsterdam's falafel. For 2013, we've pressed the reset button and endeavored to bring 40 entirely new dishes to the table.
Through Twitter and e-mail, readers nominated hundreds of dishes, and after a thorough vetting (okay, a shameful amount of eating), we arrived at our 40. Fully a third of the dishes this year are served at restaurants that have opened during the past three years. While the old list was thick with cheap eats and gas-station grub, this year readers penned prose for fries dipped in duck fat, a truffled burger and burrata that will set you back $17.
Here are the 40 dishes Washingtonians shouldn't live without in 2013:
