Haidar Karoum is departing from his position as executive chef at Proof, Estadio and Doi Moi.

Karoum said he's "moving forward, working on my own projects," but declined to elaborate further on those projects or the effective date for his departure from the restaurants he collaborated on with the late Mark Kuller.

"It's been a great nine years," the chef said.

Kuller, who died in 2014, recruited Karoum to open the wine-centered, modern-American Proof in Penn Quarter in 2007. The duo opened the Spanish Estadio on 14th Street NW in 2010 and the Southeast Asian Doi Moi, also on 14th Street, in 2013.

"We thank Haidar for his many years of service to the restaurants, but this is a positive change for our organization, and hopefully for Haidar as well," said Jason Kuller, Mark Kuller's brother and president and CEO of Fat Baby Inc., which runs the restaurants. "We are excited to move forward with our talented team of chefs, including Rufino Bautista at Estadio and Brittany Frick at Doi Moi and 2 Birds 1 Stone.  We could not be in better hands right now at Proof under executive sous chef Ben Schramm."
