Philly Italian Hoagie, above. Stuffed full with three types of meat, plus provolone, sliced tomato, onion, sweet cherry peppers and a little lettuce — you know, for balance. Hoagie aficionados will tell you that the roll is crucial, which is all well and good, but if you don’t feel like embarking on a Goldilocks-like quest for something just right, then use what’s most convenient.
Roast Broccoli Hero Sandwiches. For when you’re holding out for a sandwich that’s larger than life (see what we did there?). This might just change your opinion about veggie-based sandwiches: You’ll doctor some store-bought bread-and-butter pickles with hot sauce, roast some broccoli until it starts to get brown on the edges, slather some toasted buns with mayo and pile everything together with some crispy onions (also store-bought!) and cheese (ricotta salata, or feta if you can’t find that).
Smoked Salmon Sandwiches With Quick Pickles. Hearty pumpernickel slathered with ricotta and topped with layers of marinated cucumbers, buttery smoked salmon, and a healthy dose of capers and lemon zest. In other words: the prettiest brunch sandwich you ever did meet.
Coronation Chicken Sandwiches. Creamy and savory, with curry paste and mango chutney in the mix. What’s up with the royal name, you ask? Coronation chicken is a British dish created in 1953 to celebrate Queen Elizabeth II’s accession. Pinkies up.
Sloppy Yo Sandwiches. The Mexican-chile-sauce-dipped, chorizo-and-potato-filled pambazo, but made vegan with tofu chorizo. It’s called sloppy for a reason (we recommend not wearing your brightest whites while assembling or eating this one). You’ll make more tofu chorizo than you need for the sandwich, but know that it’s perfect in tacos or stirred into scrambled eggs.
Chicken, Bacon and Avocado Sandwiches. Does an open-faced sandwich count? (Is butter a carb?) These are better suited for dinner time, when you can enjoy them fresh and warm. But do know that the avocado-and-chickpea smash layered underneath those slabs of bacon and chicken would make a worthy pita filling for an office lunch.
