Tetsuo Shimizu is so passionate about the udon he sells at his restaurant that he grows his own wheat and makes the noodles by hand according to an old family recipe. The Perennial Plate, an American video series chronicling "adventures in sustainable eating," put his story (and his noodles) into this video.
