This is Todd Thrasher's take on the traditional rum swizzle, a Caribbean favorite. It was so named because Thrasher entered this drink in a bartending contest he did not win. The falernum adds a subtle aroma of cloves and a mysterious tang that balances the syrupy sweetness of the pineapple juice.
- 1/2 ounce Homemade Falernum (see related recipe)
- 1 ounce dark rum
- Juice of half a medium lime
- 3 ounces pineapple juice
- 1/2 pineapple slice, for garnish
Fill a highball glass with ice. Add the falernum, rum, lime juice and pineapple juice. Carefully pour the contents of the glass into a cocktail shaker and then back into the glass. Garnish with the pineapple slice.
