Inspired by a favorite breakfast treat — a pink grapefruit half sprinkled with raw sugar — this drink takes its name from Andy Dufresne, the hero of Stephen King’s “Shawshank Redemption.” It’s the sort of drink he might have enjoyed while overlooking the surf in his well-earned tropical hideaway.

Where to Buy: Sugarcane syrup is available at Batch 13 in the District; you can make your own Demerara syrup.

Ingredients
  • Ice
  • 2 ounces ruby red grapefruit juice
  • 1/2 ounce fresh lime juice
  • 1 1/2 ounces white rum
  • 1/2 ounce pink grapefruit liqueur, such as Giffard’s crème de pamplemousse rosé
  • 1/4 ounce allspice dram liqueur
  • 1/4 ounce sugarcane or Demerara syrup (see headnote and NOTE)
  • Grapefruit wedge, for garnish (optional)
  • Mint sprig, for garnish (optional)

Directions

Fill a Collins glass with ice.

Fill a cocktail shaker two-thirds full with ice, then add the grapefruit juice, lime juice, rum, grapefruit liqueur, allspice dram liqueur and simple syrup. Seal and shake vigorously for 5 to 10 seconds, then strain into the glass.

Garnish with the grapefruit wedge and mint, if using.

NOTE: To make Demerara syrup, combine 1 cup Demerara sugar (a type of coarse raw sugar) and 1 cup water in a saucepan over medium heat, stirring until the sugar has dissolved. Cook for 2 minutes, then remove from the heat and cool completely. Transfer to an airtight container; chill until ready to use (up to 1 week).
