This amazingly delicate and aromatic tonic makes one of the best gin and tonics imaginable. For optimal results, use a soda siphon with this recipe. If you don't have one, omit the water; then top off each cocktail with sparkling water or seltzer. The essential ingredient, quinine powder, is a bitter substance made from the bark of the cinchona tree. It is available at La Cuisine in Alexandria (703-836-4435) and can be ordered online from several purveyors, including www.rain-tree.com and www.herbspro.com.
For a great gin and tonic: Combine 3 ounces of Estadio Tonic No. 6 with 1 1/2 ounces of gin (bartender Adam Bernbach specifically calls for Old Raj gin) in a highball glass filled with ice. Garnish with an orange peel twist and a sprig of mint.
The rich orange and thyme flavors of the syrup used to make this tonic (see related recipe) play off the big, earthy floral and citrus tones in the Old Raj.
Make Ahead: The mixture can be stored in the refrigerator for up to 1 week.
Yield: Makes enough for 10 servings
- 14 ounces Orange-Thyme Syrup (see related recipe online)
- 8 ounces fresh lime juice
- 8 ounces water (see headnote)
- 1 1/2 teaspoons quinine powder (see headnote)
Combine the syrup, lime juice, water and quinine powder in a pitcher; stir well. Double strain and funnel into a soda siphon.
