This syrup is used to make Estadio Tonic No. 6 (see related recipe).
Make Ahead: The syrup can be refrigerated in an airtight container for up to 2 weeks.
Servings: 3 cups
- 12 ounces (scant 1 3/4 cups) sugar
- 12 ounces (1 1/2 cups) water
- 10 thyme sprigs (3 inches each)
- Finely grated zest of 1 orange
Combine the sugar and water in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a boil, then remove from the heat.
Add the thyme and orange zest; let sit for 1 hour, then strain into a container with a tight-fitting lid. Cover, and refrigerate for up to 2 weeks.
