Passion Lemon Iced Tea 8.000

If you're taking this on a picnic, ice cubes made from passion fruit juice and fresh squeezed lemon juice mixed with simple syrup can be used for ice packs in the cooler and then as flavor boosters for unsweetened iced tea -- or vodka. As the cubes melt, the drinks get sweeter.

Servings: 8
  • 8 lemons
  • 1 cup sugar
  • 1/2 cup water
  • 1 liter (33 ounces) passion fruit juice
  • 8 cups strong unsweetened iced tea, chilled


Grate the zest of 4 of the lemons and set aside in a small bowl. In a separate bowl, extract the juice of all 8 lemons (about 1 1/2 cups).

In a 2-cup microwavable container with a pourable spout, place the sugar, water and 1/2 cup of the lemon juice. Microwave on high, stirring once, for 2 minutes or until the sugar is completely dissolved. Add the zest and the remaining 1 cup of lemon juice and stir to mix. Pour the syrup into ice trays and freeze. Separately, pour the passion fruit juice into ice trays and freeze.

When ready to serve, place frozen cubes of lemon juice or passion fruit juice or both into glasses and pour iced tea over them.
